It probably could be bored off-center and crank ground wider, just weld the opposite side to off-set the grind. A really good machine shop would be required. I've never blown a headgasket and mine is .040, but then I periodically re-torque the head. If you over-heat the engine to a boil, then you can definitely plan on experiencing a blow headgasket at some point.
