One of the problems today People only hunt for the rack
Rack size is becoming smaller throughout USA due to natural selection. bucks with the gene having smaller racks are propagating the species.
I hunt for the meet. size of animal, much better venison from a two year than a five year old. I remove the heart and tung as well, tong alone weight is 6-8 pounds. We usually pickle them.
I shave the meet saw my grandfather used when he bought me how to get the cuts of meat when we brought home our white tail and elk.
