several reasons...first direct current voltage flows from negative to positive so removing the negative is just as effective as removing the positive, however when reconnecting the battery, using the negative there is less chance of a voltage spike to go through sensitive electronics used in todays vehicles. using the positive there is a voltage surge factor when reconnecting the battery because the battery will have a float or surface charge sometimes exceeding the rating of the devices in the vehicle like computers.
