Singles would be easier to do.
If you are high centering in snow, you need bigger tires. And like Jerry said, it's not as easy as it sounds. Especially if it's a dually.

My '91 dually absolutely foundered in the snow. Completely worthless from November to April. So I just parked it and drove the 4x4's in winter..
