I suppose one way to look at it is to look at classifieds and see how much a truck equivalent to yours would cost to purchase, if yours was stolen, burned up in a fire, etc., and see what that would cost to insure. If that's too much, then look at how much of a lesser truck you'd be willing to accept and balance that with the insurance you are willing to buy. Or possibly think about how much you'd be willing to pay out of pocket to make up the difference between what your insurance would cover vs the truck you want, whether that be out of pocket in terms of money for an turn-key truck, or in terms of your sweat to do the work yourself.

Of course, looking at classifieds, it's hard to know the true condition of a given truck without seeing it in person, even if it's claimed to be restored, and it's also hard to compare that to your truck, but it should give you a ballpark idea. Also, you need to look for the final selling price, rather than the asking price.
