You're designing as you go, which is just like I would do. My preference would be to have the emergency kill switch do nothing but kill the engine, and since it's an emergency device, keep it as simple as possible (just one good-quality switch, no relays). I like your relay idea better than the usual battery-post-mounted manual disconnect switch but consider that the coil of a relay that size is going to draw a considerable amount of current, which means it will tend to run your battery down pretty fast if you leave it "on" when the truck is parked.
