what I do is get my cam reground to modern specs, install it, measure the valve height, measure chamber depth and make sure i dont machine so far that valves hit head. I dont think it is possible to raise compression too much by shaving the head as the gains from shaving are minimal anyway. I used to think the gains were big until i did thamath. boring raises it much more.
