What would the lawyers say about it if you don't let your buddy (or casual customer) pay a dime and you don't sign any paperwork until the truck has been safely delivered? If something bad happens along the way, you can say you were just doing a favor for a friend. If the (ex)-friend tries to sue you, claiming you were a commercial operator, he'll have to tell the judge "I was gonna pay him" rather than "Here's the receipts for all the gas I bought and the motel we stayed in." Courts are a lot more interested in what people can prove they did than in what they say they were gonna do.
I'm not saying anybody should operate an under-the-table trucking company, but would be sad if the lawyers scared us away from helping each other out.
