Paint / Rust Removal Cost

Have my first M37. Thinking about having a third party do the paint and rust removal for the large parts, and dipping the rest myself. Question is how much should I expect to be paying for large part paint and rust removal? I don't want to get ripped off. Am I crazy to not just do it myself?
