Ben, why don't you call me at 907-349-8673 after 7PM Alaska time or on weekends? I have to work tomorrow till 5PM.
The Cummins 4BT is rated at 327 ft-lb torque. Is that enough? I'm sure it could be tweaked up a bit, maybe to 350 or so if you want to "play with internal fire" (a pun on Clessie Cummins' biography).
The WM300 is a bit longer radiator to firewall than the earlier models. As stated, the beautiful bodywork is so much a part of the essence of the truck, it would be butchery to alter it. I think you can get all the torque and drivability you need out of a 4-banger like the aftercooled 4BTA and a multispeed transmission like for example the NV5600 6 spd to harness the power curve. You will have no problem spending a lot of money on parts like these. Paul Dempsey's book "How to Convert Your Pickup, Van or Car to Diesel", my little Bible 20 years ago for diesel conversions, taught me: Don't "over-engine". A 6.0L >1000 lb 6cyl motor is too much motor for a Power Wagon, just as the 7.2L Cat 3126 is too much for the prototype New Power Wagon on 1/2 ton running gear.
