Sounds like the thermostat is closing and trapping a bit of pressure somewhere Manny.

There are several things I do with these old cooling systems;

Let it idle for 60 or 90 seconds after you stop moving before you switch it off - apparently this is good practice on all this stuff.

Try running it with the radiator cap in place but a 1/4 turn from fully down - that's normally enough to run the system without trapping any pressure in it - good if you have really old core plugs and don't want to blow them. this is normally OK unless you really work the truck hard - keep an eye on the coolant of course and take a can with you on a long run.
