Neither my Harley or my classic car are stock, BUT they could be put back if I every wanted as I always have done any modification with that in mind. For you bike I would look at either late model or aftermarket running gear to pep it up to what you want. I would not put a Japanese engine in it, something would just be lost in the translation.
