I looks like you will be over weight.
Looking up the specs on the 2017 Chevy 1500 with crew cab and standard box it has a payload of 1700 to 2000 lbs depending on how it is equipped. It is hard to tell from the information you provided, could not find 2.3 engine and do not know if it had trailer package or what transmission.

You need to look at the GVWR on the tag in the drivers door and it will tell you.

However, the 1500 has a payload of 1700 to about 2,000 lbs. depending how equipped. So 1700 for the camper and a minimum of 800 lbs of trailer tongue weight plus 2 people at 170 lbs plus 100 lbs of gear that gives you about 2840 lbs of payload which is and listed payload for the 1500 series truck.

Sorry for being the bearer of bad news but you would be over weight. You could add springs, air bags and etc to give you a better ride but you will still be over the legal weight limit of the truck. You do not want to go there as if there is an accident or your are pulled over there will be financial issues for you especially if you have an accident.

I would suggest a 1 ton truck at a minimum. A heavy duty one at that. Even with a 3/4 ton truck you can easily exceed its weight limit. The braking power of the larger trucks is also an important factor.

I suggest that you look at the total payload that you want to carry plus the weight you want to tow and base the truck on those numbers. Do not trust the sales people on those numbers check the specs and tell the sales person what you want and always check the weight tag in the drivers door.

I know its a pain in the butt, but you want to keep the family safe.
