You Can go until you see the metal start to show, not to bare metal. You certainly can mist on a guide coat. If you do end up with bare metal spots you can spray the whole thing with a non-sanding sealer; it lays down smooth, seals things like glazing putty or different paints from reacting, and makes everything a uniform color so the top coat looks even. But sealer is not required in most cases. And if it were mine I would use 400. It cuts faster and will not show scratch marks.
