Seriously, shifting up is pretty easy. Depress the clutch pedal, move the lever into neutral. Release the clutch. Let the engine rpms drop, depress the clutch again, and move the lever into the next gear up. It should be a pretty smooth transition with no grinding.
Shifting down is harder, as Steve said. Do the same process, only you have to rev the engine to shift to the next gear down. I find the engine has to rev a little higher each time I go lower in the gears.
