Blown head gasket on 230, cracked head, shave used head .025

On a pizza run for the family I noticed on the way back my engine developed a slight engine miss. I felt it at the stop light and I was only a mile away from the house. The miss continued to get worse until I was blowing white smoke and the smell of antifreeze out the tail pipe as I was pulling into the driveway. Granted we have been running this truck almost every other day in 90 degree heat with no issues what so ever. Well I ate dinner with the family which is way more important and afterward drained the radiator. The next morning I drained the oil/ antifreeze mix, also the block. I collected roughly 4.5 gallons of coolant. Ok so I lost some through the tail pipe and in the oil, oil was not milky. Loosened the head opposite from the torque sequence and the head bowed up in the middle ( o crap right ). Machine shop found the crack on top in the middle. I pulled the head off my other 230 engine and machinist had to shave .025 off of it to get it straight. Was told that it also got hot at some point. My question is how far can you shave on these flat heads? Has any body had custom copper gaskets made in a different thickness? Is the fiber gasket just as good from Napa?
