Unless inside is climate controlled I wouldn't let it set bare. Condensation only needs one time to set on your sheet metal to put a coat of rust on the surface. I would also check his previous work for distortion. Granted old sheet metal is thicker than todays but get it to hot or to long in one place and it's distorted. Why wouldn't you put on a coat of two part primer just to keep dirt and grease off that clean metal? Even if you don't have a spray booth a good coat of primer is better than nothing, just speaking from experiance.
