stripping paint off cab yes or no

I just talked to a gentalman in portsmouth NH about stripping the paint off my cab it will sit indoors after its done .will it be ok to let it sit in my garage . he said about $200 or so i thought that was good .i dont want it to get rusty . has any one ever been down this road.it wont be dipped it will be blasted off . they seem to be porfessionals and i say a 57 chevy body siting out they didnt get close though .
