It's called "Phase Separation," when water in the tank or in humid conditions are present, water mixes with ethanol in the gas, once the ethanol and water reach there saturation point, they will come out of solution. When the is happens you have a white milky layer of ethanol with a layer of water below it. This also happens in the under ground storage tanks when pumped into vehicles, will cause immediate problems in the engine.

Ethanol is a strong solvent destroying rubber and plastic components, and causing brass, aluminum, and copper to oxidize to the point the part fails. Ethanol and water also causes gum, varnish and carbon deposits inside engine components.

If the tank has enough of the water layer, that will be pumped into the fuel system making the engine difficult or impossible to start.

So what do you do to avoid all this?

- Use a gas that has additives to remove water, no cheap gas!

- Add a water absorbing and fuel injector cleaner additive such as Heet.

- In humid climates or long storage, cover and seal the tank filler pipe using a plastic bag when vehicle is not in use.
