In aircraft, high EGT is caused by running too lean a mixture. It makes sense because you are cramming a lot more air into the manifold with (I assume) no change in the fuel delivery in the jets of the carb.
It sounds like you have an EGT gauge rigged up, thats good!
You need to devise a way to add fuel to the mixture, it would be best to have an adjustment screw so you can fine tune the EGT to your desired target.
