I wouldn't think you would want stainless pistons in stainless sleeves. Anyone that has used stainless bolts has probably seen them seize and they don't come apart. Not sure about this application but I think it as least a good possibility especially with the heat from braking. I once used nitronic stainless on a project that was supposed to not seize up but it was very expensive.
