chris case has measured many heads and kept a log so hopefully he pipes in. I got your email. I found the chart and it shows up to .090 on some heads. The reason I say as much as you want is because you can only shave it to the point where valves will still clear.
That should result in about .075 or maybe more depending on valve lift.
if you shave head and put on an old engine with old rings it will probably just start going through oil at a faster pace.
it should not blow head gaskets because of raised compression. IMO the only reasons head gaskets blow is carbon build up in combustion chamber burns them out in the thin spot. That is why its best to pull head every 20-30K or so and clean all carbon out. it will make engine last 3 times as along also.
