Haven’t had indoor plumbing for about 30 years. I have used hydrated lime, peat moss, and wood ash (cold, no embers) to kill odors and absorb moisture. All are OK. Peat moss seems to help with decay more but it also adds volume. Hydrated lime and ash are better for flies, so I use that in the summer.
Winter is difficult - decay/composting is best at 60+ degrees F.
When I was working for a plumbing company we used a septic/drain-cleaning enzyme mixed with warm (not hot) water to kill odors in badly fouled crawl spaces. It ate grease and crap and left a good yogurt/malted milk smell. Throw it in, go get lunch, and in 1/2 hr you could stand to go in and work. Never tried it in the outhouse because I’m too cheap - but I bet it would work well. Not sure if the brand has changed - this looks like the same stuff: http://www.bio-clean.com/whatisbioclean.php
