Did you use the original housing for the speedo cable or did you replace both the housing and inner drive piece. If you replaced just the inner piece the inside of the housing could be dry and need more grease.

When you have a bouncing speedo needle it is usually caused by a speedo cable that needs lube or your speedo cable is kinked (housing or inner core). If either happens the inner core will tend to stick and wind up a little. When it lets loose it will spin faster then hangs again then winds up and let’s loose. So it bounces the needle since the core is not spinning at a constant speed.
