I believe they work by centrifugal force, meaning that as the air enters the opening of the filter housing, it flows downward for a short distance, then has to quickly turn direction to flow upward into the filter element, and in doing so, the contaminant particles can't make such a sharp turn from downward flow to upward flow, so they fall out of the air flow and drop to the bottom of the housing and into the oil that's in the housing, getting trapped there.
