Gaskets become water logged when they are not sealed well from misalignment of parts or warped parts. If you scroll down to cooling at the link below, you'll see my engines outlet. I originally used silicone blue gasket maker with a gasket and a small leak formed where the silver paint is, so I pulled the outlet, replaced the gasket and sealed with plumbers goop or shoe goop, they both are the same product under different marketing names, and as you can see there is no leak and it's been 5 years. I've used plumbers goop before and when you take the water outlet off, it will actually tear the gasket into leaving half on the water outlet an half on the head, it has outstanding sealing properties and really adheres to parts. The water outlet typically is a seepage area due to pressure and it will stop it.

A good product for sealing the head gasket is the Oatey Great White Pipe Joint Compound with PTFE, that was used to seal the head on the engine - no seepage, no leaks - 6,000 pounds per square inch of holding power.
