If you plan on a full restoration to high level of detail don't worry about buying a truck with a bed. You'll be money and time ahead just buying a reproduction vs paying the premium a truck with a bed brings.

If you want a nice survivor that's a whole different kind of truck.

If you're planning on putting it on a modern chassis with a Diesel then don't bother buying a PW. Just buy a 1940-1947 2wd cab with doors and then buy PW front sheetmetal and a reproduction bed.

As for what to inspect on a PW, look at everything. Look for rust, spreading between the inner and outer frame, mechanical damage, bent frame, cut frame, etc. your best bet is to look at several so you know what good is. If you can't find several for sale that you can look at post your location and maybe you'll find some owners nearby that can show you their trucks.

Always look at as many as you can so you know what good is when you see it. Or take lots and lots of pictures and post them up for the group to look at and we should be able to critique it for you.
