Here's why ethanol exists.
We all have to eat protein to survive. Most of us choose to consume protein from meat. Livestock must eat protein from crops or forage. Corn produces way more protein per acre than grass. So you can raise more meat on less land growing crops like corn. You may not think of corn as a protein crop, but that's why we grow corn-we need protein for our food supply. You are right to think of corn as a carbohydrate, because it produces way more starch in ratio to protein. It produces so much start in ratio to the needed protein, there is no way to feed that much starch to people or animals.
If you want to keep eating protein, we have to find industrial uses for all the excess fats and carbohydrates that are produced by the most efficient protein crops.
