#10 good for 30 amps, #8 good for 45 amps then it starts to get warm after that. #2 90 amps and #1 good for 110 amps. Don't undersize a 100 amp plus alternators wiring that will cause problems when the load continues for a while at higher amps. If you went with a one wire alternator that is how you do it. Just make sure when you remove the so called existing wires you still have a positive connection to the trucks fuse panels power input. It may come off the battery not off the old alternator wiring. You will need to up/grade the connection to the battery from the alternator also with a bolt on cable connection for the larger cable. If you do this remember to up/grade the negative connections also to larger cables. The negative and positive cables to the hydraulic pump motor need to be large and hooked into the battery terminal clamps for a good high amp connection. I would go to bolt on terminal clamps like used on semi/trucks so you have a place to hook them all up solid. Other then that it is easy to do this job.
