You want a alternator that is as large as the draw is on the total system. One that can power your hydraulic pump and keep the battery charged at the same time. Add up all the loads in your truck that can be on and add in the hydraulic pump. That total should be what your alternator should put out. Then your battery will not have to supply the load and drain it down in a short time of use. A 900 plus Cranking Amp Battery should be fine if the alternator is sized right.
