I believe that you have not removed the head which is fine. Also not sure which truck you are working on.
If you can remove the splash apron and then the side covers, you should have enough rom to move around.
I have a 46 that has constant valve sticking issues on 5 and 6 because I don't run it enough and it is super gooey inside. Sometimes if I run it a while then let it sit it will free up from the heat.
This being said, most valves stick open. If they are sticking open, your engine should still turn over all the way. Are you working on a straight 6 flathead?
