Very tricky question as there's just so many variables here. I will say that most tires of that size will want at least and 8.5" wide tire and probably closer to 10" recommended. That's a lot of width so offset will be vital but since you're using more modern axles it should be a lot easier for you.
Might want to make some plywood "wheels" in the diameter you want you can bolt in place and then use to measure off of for backspacing and such.
