Don't get too fancy, or it won't look like anything that would have been done in the age your truck was built.
A simple tailgate solution I can image on that bed and one that I have seen many times on old equipment would be a 2"x 8" or two dropped into a channel. You could make the vertical channel out of angle iron.
You could put a short tailgate right near the rear of the bed or move forward enough to accommodate a taller tailgate. I bet that a a single 2x8 would be plenty tall for most everything you need to contain in the bed.
The best part is it is totally functional and removable. If you don't like the look, just slide it out. You could paint it, varnish it, letter it, or just leave it natural wood
