I'd recommend doing it all from scratch - check out wiring chapters in old hot rod books. Get your gauges and lights, switches, etc first. Start with a layout sketch, add in the measurements, list the terminals where they go, and make your material list from that. Your first harness won't be a piece of art but it will all seem really simple by time you are done.
