Overheating ( Maybe) in 360

Fired up the WDX with the 360 in the driveway this afternoon and although it was cool out (90 degrees)for AZ after some time at high idle water began coming out of the overflow tube ( new modern temp gauge in cab read 200+). The motor has been recently rebuilt from top to bottom and everything is new including the water pump. The radiator is stock (47 WDX) but it has been re-cored with the only thing not new being the top. New radiator cap is 5psi. The 16" 2350 cfm high volume electric fan is brand new and is thermostatically controlled to come on at 185 degrees (same as engine thermostat). All hoses are new and unrestricted. On a previous run on a cooler day and with the truck moving at 35mph no overheating was observed. Since I have no room for a mechanical fan replacing the electric one is not an option. Maybe I'm overreacting as coolant didn't boil out of the top of the radiator just out the overflow but presumably the coolant is still boiling? Any thoughts on running cooler while the truck's at rest will be appreciated.
