These gauges have an adjustable, built in switch that would allow you to turn on or off the electric choke when temps go above your set point.

They even have these for head temperature for air cooled engines.

If your trolleys already have round gauges, simply replace the water temp gauge with one of these babies, and wire your electric choke thru the contacts built into the gauge.
