Sounds like you're using 40 wt, not a multi-viscosity like 10/40. The 10 means it won't get thick at low temps, the 40 means it will stay thick at high temps.

An aside about oil: Oil should run at about 220 degrees, it'll boil off the water vapor that turn the oil to sludge. Oil does run hotter than the thermostat setting, but on our flat fenders, the 165 thermo will shorten oil life- notice how todays cars run 205 thermostats and the oil lasts 7k miles instead of 2,000 like in the old days? But also, per a temp/viscosity chart, all weights of oil are thin as water at 250 degrees... damned if you do, damned if you don't? Maybe thats why hot rod air cooled engines use an oil system with a thermostatic bypass?
