I think wheels offset to the outside will also make steering issues worse, and that offset may impact more than just the size of the tire. As the contact point with the road gets farther outboard of the king pins, the bumps have more leverage and cause more kick back in the steering.

I run 11.00x16s on original wheels and mine steers straight as an arrow over bumps and all.

I like adding caster to increase the tendency for the wheels to return to center and point straight ahead. I'd do that before adding a stabilizer. A stabilizer might dampen the bad effect of offset tires, but a stabilizer will also dampen the good effect of proper caster in a naturally aligned front end.
