There are different factors involved here. How much moisture is in the ground that your building is on or your vehicles are sitting on?
What are the temperature contrasts at a given time between the inside and the outside.
How much ventilation was built into the roof and gables of the barn?
If moisture is coming in through the ground and can't escape some other way it's going to collect on the ceiling, whether the ceiling is bare or insulated. In your case, you probably didn't have a tremendous amount of moisture coming in and the insulation prevented the outside temperature and the inside temperature differential and the dripping stopped. If your building is only a covered shed with no covering on the walls, I can see how that would work for you.
