I had the same line of thinking when I designed my system. I went with a 7" booster for the minimum amount of boost - no sense kissing the windshield!

My master cylinder has 1-3/8 piston travel, and I use about 90% of that when the pedal hits the floor. The bore is the standard 1-1/4", so if I loose vacuum I should be able to stop reasonably well. Though with a dual circuit master, I'm pushing out twice as much fluid, so I will have to push harder to get original results. But I have twice as many wheel cylinders in the back, so that will reduce pedal resistance. Although....
