There will be a caramelized surface layer at any cut accomplished by burning the material being cut regardless of the cutting method, be it O/A, O/P, laser or plasma. If memory serves it is well discussed on Esab University.

You need to remember the real fuel in any of these processes developing the heat is the burning metal.

Why plasma cutting takes a curve on thick metal; I've listened to people who understand Physics much better than I do, and "Brilliant engineers" explain what they think causes the cut to turn. After all that listening, I just decided to take advantage of the angle as weld prep that eliminates grinding a V groove.
