Use good auto body tape not some cheap discount stuff.
I like paper over plastic to mask of large areas. You might consider running a ground strap down to the concrete floor. Enjoy yourself.
If you are going to run a heater in the cab i think it might be a good idea to mount the heater and the defroster pieces before doing much else under the dash. I found I could get to quite a few things through the front cowl vent - so leaving it off for awhile may speed up other jobs.
