(1) You can use epoxy as a sealer, over pretty much any mud, primer or what not, shoot the topcoat within three days seems to be standard.
(2) Wet sanding , you could have used the more expensive and hard to work filler and wet sanded to your hearts content. The good stuff is talc free. You may want to get the heat lamps out and cook the body a bit if you have sanded through to the filler.
(3) Paper - you do not want to go two fine a paper on the primer coat- 220 might be about as fine as you want.
