Larry's W300 Crew Cab is custom built on a Dodge bus chassis, similar frame size to your W500. It has an 8 ft Sweptside box.

I believe it has front and rear winches, one or both are hydraulic, which requires more parts/weight than PTO driven.

The CAT engine is at 1750#s, the Allison Auto adds more, plus the Spicer Aux. trans.
But the DANA 70s are not near as heavy as the Rockwells.

He indicates that he did go across the scales at 14K, but I don't remember if his custom gas tank was full or not, it holds 1000#s worth of fuel.

I myself found it hard to believe, since my W300 Crew Cab with Perkins Diesel wieghed 6860 empty, but has a shorter wb of 146, and the same winch as yours.

I would think that your truck would come in around 12-13K, and would be in the same range as Larry's custom built W300.

I will drill him on it again.
