It all just depends how good you are at bodywork.
Like the best bodyshops use the thinnest epoxy they can get, then they skim big flat areas with high quality filler, board the whole thing out with a long board & then epoxy it again. It's important to let the epoxy dry thoroughly before any sanding. Like some good epoxies they recommend several weeks drying time. Many of the new epoxies dry faster but you can see sanding scratches if you don't let it fully cure.
High build primers tend to shrink lots & continue shrinking long after you've top coated it.
That said, it's commonly used to save time at flat rate bodyshops.
My advice is to use it where you think you need it & to use regular epoxy if the sheet metal has no damage...floors etc.
Like I say, it's meant to be boarded off...most of it & then re coated with conventional epoxy prior to any fine sanding.
