Personally, if you want it to be a dually for the sake of being one (or just because you think it's cool) then go for it. But honestly you are opening a can of worms trying to put a bigger engine in it.

Depending on the axles that it has adding dual rear wheels doesn't mean it can handle the kind of loads you were talking about. Giving you wider shoes will not make you better able to carry more weight. Adding the 360 means more go, which means more stop which means brake upgrades, and it just grows from there. If it has the smaller early axles upgrades are not as readily available as for the later Chrysler axles.

In my opinion (and remember it's worth about what you're paying for it). I'd either look at dropping it on the other trucks frame if you want the look with the newer truck capability, or (and this is my personal preference) just get it running as is and keep it around as just a cool farm truck for puttering around the farm in, because it will do that for another 70 years easy.

A third option would be to restore it, but honestly being a franken-truck already it's never going to give you any real return on that investment.

But again, your trucks, you madness, your money do whatever makes you happy. I'm just throwing ideas out there, feel free to skeet shoot!
