I did the same as everyone else. My engine had a single wire gauge sensor near the thermostat on top which I replaced with the sender for my gauges, but I installed my temp sensor for the fan control box into one of the two threaded bosses in the bottom pump suction elbow for the same reasoning as below. Only really need the fans on when the return temp signals that the rad needs help.

As for temps, not sure yet as I haven't run anything but it's adjustable on the unit I used. It's a solid state unit from Be-Cool IIRC, has a low speed turn-on feature where it starts the fan(s) at 60% and ramps them up if needed to reduce startup and running load. Also has provisions for overrides for on and off (in case you're in deeper water or similar) so I wired up a three way switch to control that.
