I'd like to hear from someone who really knows, but my impression has always been that on engines that came stock with bolts, the reason to go to studs is if you think you'll need to pull the head a lot. That way you don't risk buggering up or stripping the holes in the block and you don't have to re-seal them where they go into the water jacket. The torque spec should be adjusted by the ratio of thread pitches since a fine thread will put more tension into the stud for a given torque than a coarse thread will. It might be easier to get a consistent torque on all studs, since you know the threads are all the same and are all clean.
