I do it a little different than Chris. I have a couple of acres and I just lay out the new cable on the ground (mowed grass) ahead of the truck. Run the winch as slow as you can. I lowered the idle to help. I use a heavy rag, old towel, or piece of sweat pants/shirt, and run the cable through it. In the event of a snag I can let go of the rag. This lets me put a little resistance on the cable, as well as the weight of the cable and tail chain. When I get to where the chain connection is about 3' away I go around and turn the key off.
My drum has a u-bolt through one side to clamp the cable. This creates a bit of a challenge in making it lay neatly, but if you go real slow and take your time, you can do it. I like the drums that have a hole through the bottom with a set screw to hold the cable.
Before you start, make sure the drum brake is adjusted correctly. In the event you have to de-clutch, and the brake is loose, you will end up with a major mess, just like a backlash in a fishing reel. Speaking from experience. :)
