I planed mine down from rough 4/4 material.The bottoms are still skip surfaced, which I disc sanded smooth. Every good wood worker knows that the bottoms has to as smooth as the tops, and nearly equal finish, or the table will warp.

IIRC, the only problem with fitting for thickness is where the end panel / headache board and rear facia, meet the side angles. If 7/8 don't fit, Loosen the appropriate bolts. Still not, I would ovulate some bolt holes to lower those.

Fitting around the curved fenders is a piece of cake. Any carpenter knows how to scribe in a joint, And this one is probably +/- 1/8" Do one side and use as a pattern for the other.

Just do not weld the straight side angles to the curved ones, they need a bit of flex in there.
